We traveled from Mauretania to Senegal in Rosso. They stamped my Carnet de Passage.
Now we want to go back to Mauretania in Diama.
Do they stamp my Carnet de Passage exit part?

they should.
if not (and you are on your way back to europe) no problem since you dont need a carnet in RIM and MA and european customs can confirm that the car is back in the EU

But the exit stamp you need for ADAC to know that there cannot be a tax claim from Senegal.
I had this problem before whene I came back from the east side of Africa.
The ADAC will not return the deposit until the Carnet is exposed. And mine is valid untill 1-1-2020.
So I have to be sure that they will stamp my Carnet at Diama border Senegal exit!
But the exit stamp you need for ADAC to know that there cannot be a tax claim from Senegal.
I had this problem before whene I came back from the east side of Africa.
The ADAC will not return the deposit until the Carnet is exposed. And mine is valid untill 1-1-2020.
So I have to be sure that they will stamp my Carnet at Diama border Senegal exit!

that's why you need to have a EU custom official stamp the carnet on the last page to confirm that the car is back in the EU.

that's what it says in the instructions Page 5, "Bei Rückkehr nach Europa müssen Sie das Fahrzeug ......"

i.e. last page of carnet "certificat de Présence" needs to be stamped by a German customs offical (if car is registered in Germany) to confirm that the car is back in the EU
the procedure is also explained in the carnet itself on the same page, "Important ...."

I know about the last page. It can be stamped by any customs in EU.
But most important of the Carnet before sending to ADAC is that for each country you stamped entry, they must also be stamped for exit.
Then you stamp the last page in EU by customs, send it to ADC and your deposit will be send back at your banking account.
So, that is why I asked if the bprder in Diama on Senegal side will stamp my exit part on the Carnet.

In my case, in 2013, they did so.
BUT i am not shure, if Mauretania gives a Visa on entry?

Carnet stamp in Diama Senegal
we passed the Diama border at the end of January 2019 and the Senegal Custons Officer at the border customs post stamped our Carnet exactly as he should. He took out the page for the customs administration as well. No fees for that.
Back in Spain I got the Carnet stamped again at the Algeciras port customs entry control, just after leaving the ferry.
I stopped there and asked and a very helpful customs lady knew what she had to do, marvellous and no payment at all.

Visa in Diama - Birette - Mauritanian side
An ordinary entry visa for Mauritania is issued at the border.
Arriving on the Mauritanian side of the border you see a small white box house on the left side - the visa office.
They take a photo and fingerprints , you pay 55 Euros - cash only - no other currency.
In need you can change money at the border - there are moneychangers around.
The visa is for 30 days, one entry - same on all Mauritanian border posts.
If necessary you can change it in Nouakchott - ask the visa officer (a very friendly man) for the address.

At police post 1 officer asked for bribe, but a simple "no merci" and you get your passport back.
Extra:
For the dam on Senegal side you pay CFA4000
For Nat. Park crossing at Mauritania side you pay Ouguiya 200 pp
